The reason is simple
Ordinary tap water does not only consist of water and oxygen, but also contains minerals in addition to debris and other gases. During the heating (evaporation) of tap water, the water (H2O) is converted into carbonic acid in conjunction with the air content of carbon dioxide (CO2). The CO2 content in the mixture thereby decreases. However, the minerals contained in tap water require CO2 in order to remain in soluble form; otherwise, they are converted into a solid state whereby lime is formed.
The consequences are far-reaching
If these minerals are not removed from the tap water before it is fed into and processed by a humidification system, these ‘contaminants’ can cause the humidification system to shut down and result in high maintenance and replacement part costs.
